French Bakery Vanilla Cupcakes

Ingredients: Cupcakes:

1 ½ sticks unsalted butter, softened
1 ½ cups granulated white sugar
2 eggs
3 teaspoons vanilla extract
3 teaspoons baking power
¼ teaspoon salt
1 cup milk
2 1/2 cups flour
¼ cup whipping cream

Frosting:

1 box confectioner's sugar
1 stick unsalted butter, softened
2 teaspoons vanilla extract
¼ cup whipping cream or as needed for speeding consistency

Decorations:

Assorted colors of Cake Mate Decorating Icing (pastel colors work best for French Bakery-style cupcakes)
1 box Cake Mate Writing Icing (4 colors)
1 bottle Cake Mate Nonpareils Decors
1 bottle Cake Mate Snowflake Decors
2 packages Cake Mate Barbie® Candy Cards
Instructions: 1. Preheat oven to 350°
2. Place butter in large mixing bowl and beat until fluffy. Add sugar and beat again until fluffy. Add eggs, beating a few seconds after each one. Add vanilla and blend.
3. Place baking powder, salt and flour into small bowl and stir with fork, combine well.
4. Add milk and whipping cream, beat until smooth and slightly thickened.
5. Pour into muffin cups, slightly more than ½ full.
6. Bake for 20 minutes until golden brown.
7. Cool completely before frosting and decorating.

Frosting:

1. Combine all ingredients in bowl, beat well until light and fluffy.
2. Cover and refrigerate until ready to use, bring to room temperature before frosting cupcakes.

Decorating Cupcakes:

1. Frost cupcakes with frosting, set for five minutes
2. Decorate each cupcake differently using Cake Mate Barbie Candy Card flowers, hearts and other whimsical designs
